Fish of the Month - Pollock

Pollock
 
Pollock (or pollack) is found in abundance in both Atlantic and Pacific waters. A firm, flaky white-fleshed fish, it is much more sustainable alternative to cod. Pollock move in large shoals near the surface of the water and can easily be caught by mid-water trawling methods which leave the sea bed untouched.
 
Pollock are generally available only from May to September, but freeze exceptionally well, so buying from frozen is also a good option.

Similar in texture and flavour to cod, pollock is the perfect fish to give the traditional beer batter treatment.
 
Pollock in beer batter
(Serves 4)
 
4 fillets of pollock
1.5 litres vegetable oil or (pan should be just over half full)

For the batter:

300g self-raising flour
60g cornflour
1½ tsp salt
½ tsp sugar
¼ tsp white pepper
250ml lager-style beer
250ml sparkling water
30g yeast
 
Method

Place the flour and salt in a bowl. Mix the other ingredients in another bowl and leave to stand for 10 minutes. Make a well in the flour, pour in the liquid and whisk well to avoid lumps. Leave to stand for 15-20 minutes before using.

Next, dip the fish in the batter and coat all over. Fry in hot oil at 180°C (you can use the same pan for chips) for 7-9 minutes before draining, drying and serving.
